Deep ruby red colour with violet highlights. Vibrant and fresh, with aromas of red cherries, blackberries and hints of Parma violet. On the palate, medium-bodied and well-structured, with smooth tannins and lively acidity. The finished is clean and persistent, with notes of ripe red fruits and a subtle hints of sweet spices. Without the influence of wood, the fruit flavors
become more prominent and fresh.

Ingredients
100 g Rigatoni
50 g Minced meat
100 g Tomato puree
15 g Rocket
15 g Egg
10 g Stale bread
15 g EVO oil
Basil qb
Grated Parmesan cheese to taste
Salt and pepper to taste
Procedure
In a saucepan incorporate ground meat, stale bread soaked and squeezed, the egg, a pinch of salt and pepper and a little grated Parmesan cheese form a dough with which to form meatballs, go to bake in the oven with a little oil for 10 minutes at 170 degrees. In a frying pan heat EVO oil, a little basil and add the tomato puree, cook for 15 minutes on low heat, take the meatballs out of the oven, incorporate into the tomato puree, cook the pasta in boiling water drain and toss with the prepared sauce. Serve, add parmesan cheese, rocket and a drizzle of EVO oil.
